Do you need a Gluten Free idea for St. Patrick’s Day? Here are some ideas …

I like doing special treats on special days … yet sometimes I don’t plan and I don’t have a lot of time … and I am really not sure how I am going to pull anything special off! I’m sure you have felt the same!

So, if you have gluten free kids or teens and you want to do something special but you don’t have a clue of what to do and you are running low on time … here’s a couple ideas to make the day fun.

You could make some pancakes and put some green dye in them. If you have extra time, use a cookie cutter to cut them out into shamrocks and the kids will think it’s a very fun way to start the day! We love the recipe from America’s Test Kitchen cookbook or you can pick up a mix (we like Kinnikinnick Pancake and Waffle Mix).

If you really don’t have time or energy, as we all feel like that sometimes. You could dye some whipped cream green and dip fruit into it. Or there was one year that I simply put some green dye into their milk. I thought it was fun, but my kids were little at the time and refused to drink the milk!

When it comes to any occasion, I usually make sugar cookies. I love sugar cookies and I think they are fun to make. If you have taken my sugar cookie class, you could always make shamrock sugar cookies and decorate with my royal icing.

I love cookie cutters, I have a lot! Use your imagination and use your cookie cutters to cut everything and anything into shamrocks. It doesn’t require any cooking and it makes it fun. You can cut cheese, cold meat, bread, toast, cucumbers, etc. Remember, that your kids won’t remember that you fussed for hours baking something … they just remember that you had fun with them …. so remember to have fun!

Or, you can make chocolate shamrock cookies. They are easy and quick to make. To me, they taste a bit like Oreos’s .. and we all know that oreo’s are a hit these days!!! If you don’t have a shamrock cookie cutter you can just make them into circles.

You don’t have to have any fancy flours … I use a cake mix in this class! You also will get a recipe card for my favourite buttercream icing (which you could dye green!).

Hopefully I have inspired you to make something special for your gluten free love. Pick something that you have time for, it doesn’t have to be fancy. Remember, it’s the time you spend with your family and the memories you create, that your kiddos will remember the most.
